Oklahoma sets out its signing steps one by one, and it accepts a handwritten will only if it is dated as well as written and signed by hand.
Every Oklahoma will other than a holographic or nuncupative one must be in writing and executed in four steps the statute lists in order. It must be subscribed at the end by the testator, or by someone else in the testator's presence and at their direction. That subscription must be made in front of the attesting witnesses, or acknowledged to them as the testator's own. The testator must declare to those witnesses that the instrument is their will. And there must be two attesting witnesses, each of whom signs.

No. Section 55 requires two attesting witnesses, not a notary, and notarizing an Oklahoma will does not replace them. A notary appears only in connection with a self-proving affidavit.

Yes, on a strict condition. An Oklahoma holographic will is one entirely written, dated and signed by the hand of the testator. All three, in your own handwriting. It is subject to no other form, may be made inside or outside the state, and need not be witnessed. Leave out the date and it is not a holographic will.
